Supermarkets sell overripe bananas at a cheaper price (about half the original price) all the time.  So, whenever I find this opportunity,I grab a pack and buy and use it in baking fresh quick bread recipe.  Yesterday, I had the chance to buy a pack of ripe bananas again in the supermarket and baked My Chocolate Banana Bread with oats and nuts. It was awesome with a glass of hot milk especially in the morning.  My kids really love it.  Check out the recipe below and you’ll find it easy and forgiving.


Chocolate Banana Bread with Nuts Recipe:


3 cups mashed ripe bananas

4 cups of all purpose flour

1 1/2 cups rolled oats

1 cup walnuts or  almonds

5 large eggs

3 cups of brown sugar

1 cup natural flavor yogurt or sour cream

3 teaspoons baking powder

3 teaspoons baking soda

3 teaspoons fresh cinnamon powder

1 teaspoon salt

2 1/4 cocoa powder

3/4 cup corn oil/vegetable oil/canola oil

3 teaspoons pure vanilla



Pre-heat your oven at 350F or 180C and grease 3 9×5 loaf pan.  I want my pan with a piece of wax paper at the bottom of the pan to make it easier to remove it.

Step 1: Cream the eggs with brown sugar gradually by an electric mixer.  If you don’t have a mixer, you can just cream your eggs with a whisk, then add the brown sugar gradually.  It may take  around 3 minutes to cream the eggs with brown sugar, and around 15 minutes by hand.  Add the corn oil in the mixture, and then pour your vanilla.


Step 2:  Prepare your dry ingredients. In a bowl, put your all purpose flour, rolled oats, walnuts, baking powder, salt, cinnamon powder, and cocoa powder.  Make sure that you incorporate all your dry ingredients.


Step 3: Prepare your banana mixture. In another bowl, place your mashed bananas. Add the yogurt well into the mashed bananas, then put the baking soda.  Mix well.


Step 4:  Pour your banana mixture on the dry ingredients.   Mix a little then add the egg cream.  Mix until incorporated, but avoid over mixing your batter to avoid stiff, hard quick bread.  Pour into your greased 9×5 loaf pans and bake for around 55 – 60 minutes.  If you have choco-chips, you may wants to sprinkle them on top of your batter.

Allow to cool down before slicing your Chocolate Banana Bread with Oats and Nuts.  Enjoy.
